 Papeback Marcella's Kitchen by Marcella Hazan has classic Italian food by the cook who believes that 'the best dishes are always best made at home'. Ms Hazan explains the origin and development of her recipes and includes 250 new ones. Bio info >> Hazan was born in 1924 in Cesenatico in Emilia-Romagna. Her parents & her grandmothers cooked, and although she doesn't seem to have done much herself she obviously absorbed an enormous amount. In the kitchen of her New York apartment there was no one to coach her so she began by using cookbooks from Italy, but then began to reuse that acquired information/methodology that she had from home and created her own dishes based on them. Hazan began giving cooking lessons in her flat, and opened her own cooking school, The School of Classic Italian Cooking, in 1969. In the early 1970s, she began to contribute to the NY Times. Hazan's cookbooks concentrate on strictly traditional Italian cookery without American or British influence. Her recipes tend to use only ingredients that would be foundd in Italian kitchens. Hazan's recipes emphasise careful attention to detail. She recommends preparing food by hand rather than processor and prefers the stovetop to the oven because it's more engaging. Her Hand-Made Mayonnaise story is precise, amusing, and makes me want to make mayonnaise. Baking an English Loaf goes into great detail and encourages everyone to read a few simple instructions and make a decent loaf of bread. She could be sassy. I'm glad Elizabeth David was crazy about food and shared so much info in her many article and books.   Very Good/Very Good

Boy am I glad I did! These are cracking recipes, the book is well structured and, as long as you skip the crinch-makingly twee intro, very readable. To be fair to the woman, she also properly credits ideas and recipes she's pilfered from other writers and cooks like Jane Grigson and Ruth/Rose of River Cafe fame. I did throw away the lurid dust jacket and can reveal that underneath is a very well-designed jacket of water washing over sand. During the 50s Beard made his name as 'James Beard', the brand name, the face and belly of American gastronomy. Julia Child accurately sums up Beard's personal life in a brief description: "Beard was the quintessential American cook. Well-educated and well-traveled during his eighty-two years, he was familiar with many cuisines but he remained fundamentally American.
